Over the past few years in Thailand, humble platters of sliced, cured meat have successfully made their way into the haute menu of many modern eateries. Charcuterie, as the French call this preserved meat prepared according to ancient European traditions, served on rustic wooden boards and complemented perfectly with wine, has become a very much sought-after treat by today’s gastronomists.
